Sauteed String Beans with Diced Tomatoes
Tomatoes, onions and olive oil are staples in the Italian
Mediterranean Diet. Make it the center of your dish by adding feta
cheese and serving it over couscous. It also works as a perfect
accompaniment to fresh fish.
Ingredients
1 lb string beans
1 small onion, diced
1 large tomato, diced (or can of diced tomatoes)
1 clove of garlic, finely chopped
2 tsp of olive oil
salt and pepper
In a medium non stick skillet saute onions in olive oil until soft and
translucent over medium heat. Add garlic and tomatoes. Cook for about 4
minutes. Add string beans and cover for about 10 minutes or until
soft. Add salt and pepper to taste. Experiment by adding chopped
fresh herbs to the mixture at the very end. Parsley or dill work great.
Serves 2-3
