Mediterranean Diet Recipes

Bean and Tomato Bruschetta

This Mediterranean Recipe is a quick and healthy appetizer. Works great for parties and hor'dourves. Kidney beans are an excellent source of fiber and protein.

Ingredients

1 can of kidney beans, rinsed and drained
1 large ripe tomato, diced
1 clove of garlic, minced
1/2 small Vidalia onion, diced into small pices
3 tsp extra virgin olive oil
3 tsp of Balsamic Vinegar
2 tsp of flat leafed parsley or dill
6 slices of crusty whole wheat bread

Salt and pepper

Toast bread.  Combine beans, tomatoes, onion and garlic into medium bowl.  Add olive oil, balsamic vinegar and parsley (or dill). Gently mix. Salt and pepper to taste.  Serve on top of toasted bread.

Serves 2-3
